Method
- Mash bananas until mostly smooth.
- Melt butter in a saucepan over medium heat.
- Add brown sugar and stir until bubbling.
- Stir in bananas, spices, and salt. Cook until thickened.
- Add rum and simmer until alcohol cooks off.
- Remove from heat and stir in vanilla and lemon juice.
Notes
Jam thickens as it cools. Store refrigerated.
