Ingredients
  

Banana Jam Base
  • 3 ripe bananas very ripe
  • 0.75 cup brown sugar packed
  • 2 tbsp unsalted butter
  • 0.25 cup dark rum
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 0.25 tsp salt
  • 1 tbsp lemon juice fresh

Method
 

  1. Mash bananas until mostly smooth.
  2. Melt butter in a saucepan over medium heat.
  3. Add brown sugar and stir until bubbling.
  4. Stir in bananas, spices, and salt. Cook until thickened.
  5. Add rum and simmer until alcohol cooks off.
  6. Remove from heat and stir in vanilla and lemon juice.

Notes

Jam thickens as it cools. Store refrigerated.
