Ingredients
  

Pork Loin
  • 3 lb pork loin
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tsp Dijon mustard
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 large onion sliced
  • 1 cup chicken broth

Equipment

Method
 

  1. Season and rub pork loin with herb mixture.
  2. Sear pork in Dutch oven until browned.
  3. Sauté onions and add broth.
  4. Roast covered until internal temperature reaches 145°F.
  5. Rest, slice, and serve with pan juices.
