Ingredients
  

Soup Base
  • 30 oz black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 whole bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 4 cups broth (vegetable or chicken)
  • 1 whole lime, juiced
  • 1 tsp salt
  • 1/2 tsp black pepper
Optional Toppings
  • 1 medium avocado, diced optional
  • 1/4 cup cilantro, chopped optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Sauté onion, bell pepper, and garlic until softened.
  2. Add spices and cook 1 minute.
  3. Add black beans and broth; simmer 10 minutes.
  4. Blend half the soup to thicken.
  5. Stir in lime, salt, and pepper; serve hot.

Notes

Blend more or less depending on desired thickness.
