Ingredients
  

Wellington Components
  • 1.5 lb beef tenderloin center-cut
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 12 oz mushrooms finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 6 slices prosciutto
  • 1 sheet puff pastry thawed
  • 1 large egg beaten

Method
 

  1. Season and sear beef until browned; cool completely.
  2. Cook mushrooms with garlic and butter until dry.
  3. Wrap beef with prosciutto and mushroom mixture.
  4. Wrap in puff pastry and brush with egg wash.
  5. Bake until golden and beef is cooked to preference.
