- Heat olive oil in a large pot and sauté onion, carrots, and celery.
- Add garlic and cook 1 minute.
- Add broth, chicken breasts, thyme, parsley, bay leaf, salt, and pepper.
- Simmer 20 minutes until chicken is cooked through.
- Remove chicken, shred, and return to pot.
- Add egg noodles and simmer 8–10 minutes.
- Adjust seasoning, remove bay leaf, and serve warm.
Notes
For meal prep, cook noodles separately to prevent them from absorbing broth over time.
