easy chicken noodle soup

Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 3 large carrots sliced
  • 3 stalks celery sliced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 1 lb chicken breasts boneless, skinless
  • 2 cups egg noodles
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • salt and pepper to taste
Optional Add-Ins
  • fresh parsley for garnish
  • 1 tbsp lemon juice optional
  • peas, corn, or spinach optional vegetables

Equipment

  • Large soup pot
  • Cutting board
  • Knife
  • Mixing spoon

Method
 

  1. Heat olive oil in a large pot and sauté onion, carrots, and celery.
  2. Add garlic and cook 1 minute.
  3. Add broth, chicken breasts, thyme, parsley, bay leaf, salt, and pepper.
  4. Simmer 20 minutes until chicken is cooked through.
  5. Remove chicken, shred, and return to pot.
  6. Add egg noodles and simmer 8–10 minutes.
  7. Adjust seasoning, remove bay leaf, and serve warm.

Notes

For meal prep, cook noodles separately to prevent them from absorbing broth over time.
