Ingredients
  

Shawarma Chicken
  • 1.5 lbs boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 0.5 tsp ground cinnamon
  • 0.5 tsp cayenne pepper optional
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon, juiced
  • 0.5 cup plain Greek yogurt
Garlic Yogurt Sauce
  • 0.5 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
For Serving
  • 2 cups cooked basmati rice
  • 1 cup chopped cucumbers
  • 1 cup diced tomatoes
  • 0.5 cup sliced red onions
  • 0.25 cup chopped parsley

Equipment

  • Mixing bowls

Method
 

  1. Combine all marinade ingredients and coat chicken thoroughly. Refrigerate 30 minutes to 3 hours.
  2. Cook chicken in a skillet over medium-high heat 5–7 minutes per side until golden brown.
  3. Whisk together garlic sauce ingredients in a small bowl.
  4. Assemble bowls with rice, chicken, and vegetables. Drizzle with sauce and serve warm.

Notes

Marinate overnight for the most flavor. Works great for meal prep or wraps.
