Ingredients
  

  • 3 cups cooked shredded chicken
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 0.5 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 0.5 cup cheddar cheese shredded, optional
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13 casserole dish.
  2. Prepare stuffing mix according to package directions and set aside.
  3. In a large bowl, mix chicken, cream of chicken soup, sour cream, broth, vegetables, and seasonings.
  4. Spread mixture into prepared casserole dish.
  5. Top evenly with prepared stuffing and sprinkle with cheese if desired.
  6. Bake uncovered for 25–30 minutes until stuffing is golden and filling is bubbling.
  7. Remove from oven, cool slightly, and garnish with parsley before serving.

Notes

This casserole freezes well before or after baking. Add extra vegetables like broccoli or green beans for variation.
