- Preheat oven to 375°F (190°C) and grease a 9x13 casserole dish.
- Prepare stuffing mix according to package directions and set aside.
- In a large bowl, mix chicken, cream of chicken soup, sour cream, broth, vegetables, and seasonings.
- Spread mixture into prepared casserole dish.
- Top evenly with prepared stuffing and sprinkle with cheese if desired.
- Bake uncovered for 25–30 minutes until stuffing is golden and filling is bubbling.
- Remove from oven, cool slightly, and garnish with parsley before serving.
Notes
This casserole freezes well before or after baking. Add extra vegetables like broccoli or green beans for variation.
