Ingredients
  

Salad
  • 3 cups cucumber chopped
  • 2 cups tomatoes chopped or halved
  • 0.5 small red onion thinly sliced
  • 0.5 cup Kalamata olives pitted
  • 0.75 cup feta cheese cubed or crumbled
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar

Method
 

  1. Combine cucumber, tomatoes, onion, and olives in a bowl.
  2. Add feta cheese on top.
  3. Drizzle with olive oil and vinegar, then season.
  4. Toss gently and serve.
