  • 2 cans black beans, drained and rinsed
  • 1 tablespoon olive oil or coconut oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons tomato paste
  • 1.5 tablespoons curry powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt adjust to taste
  • 1 can full-fat coconut milk 13.5 oz
  • 0.5 cup vegetable broth or water
  • 1 tablespoon fresh lime juice
  • fresh cilantro for garnish
  • cooked rice for serving

Method
 

  1. Heat oil in a skillet, sauté onion until translucent.
  2. Add garlic and ginger, cook until fragrant.
  3. Stir in curry powder, paprika, cumin, and tomato paste.
  4. Add black beans, coconut milk, and broth; simmer 10–15 minutes.
  5. Stir in lime juice, garnish with cilantro, and serve with rice.

Notes

Adjust spice levels to your liking. This curry thickens as it cools — add a splash of broth to reheat.
