  • 1 lb ground beef
  • 1 medium onion, diced
  • 4 medium potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil or butter
  • fresh parsley, chopped (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook ground beef and onion in a skillet until browned; drain fat and season.
  3. In a bowl, whisk together cream of mushroom soup, milk, and 1 cup cheese.
  4. Layer half of the potatoes, beef, and sauce; repeat layers.
  5. Top with cheese, cover with foil, and bake 40 minutes; uncover and bake 20–25 more until golden.
  6. Cool 5 minutes, garnish with parsley, and serve warm.

Notes

Make ahead and refrigerate before baking for easy meal prep. Add extra cheese for a gooey topping.
