- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Cook ground beef and onion in a skillet until browned; drain fat and season.
- In a bowl, whisk together cream of mushroom soup, milk, and 1 cup cheese.
- Layer half of the potatoes, beef, and sauce; repeat layers.
- Top with cheese, cover with foil, and bake 40 minutes; uncover and bake 20–25 more until golden.
- Cool 5 minutes, garnish with parsley, and serve warm.

Make ahead and refrigerate before baking for easy meal prep. Add extra cheese for a gooey topping.
