Casserole Base
  • 1 box Jiffy corn muffin mix
  • 1 can whole kernel corn drained
  • 1 can creamed corn
  • 1 cup sour cream
  • 0.5 cup unsalted butter melted
  • 2 large eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease baking dish.
  2. Mix all ingredients in a large bowl until combined.
  3. Pour batter into baking dish and smooth the top.
  4. Bake for 40–45 minutes until golden and set.
  5. Rest briefly before serving.
