Ingredients
  

Soup
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 cup lentils rinsed

Equipment

Method
 

  1. Sauté vegetables in olive oil until softened.
  2. Add spices, lentils, broth, and bay leaf.
  3. Simmer until lentils are tender.
  4. Finish with lemon juice and garnish.

Notes

Add lemon at the end for the brightest flavor.
