- Preheat oven to 375°F (190°C) and grease a 12-cup muffin pan.
- In a bowl, mix mashed potatoes, eggs, cheeses, flour, melted butter, green onions, and seasonings until combined.
- Spoon mixture into muffin cups, filling 3/4 full. Top with extra cheese.
- Bake for 20–25 minutes until golden brown. Cool slightly before serving.
Notes
Great use for leftover mashed potatoes. Add bacon or veggies for variation.
