  • 2 cups mashed potatoes leftover or freshly made
  • 2 large eggs
  • 0.5 cup shredded cheddar cheese plus extra for topping
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup all-purpose flour
  • 2 tablespoons melted butter
  • 2 green onions, finely chopped
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin pan.
  2. In a bowl, mix mashed potatoes, eggs, cheeses, flour, melted butter, green onions, and seasonings until combined.
  3. Spoon mixture into muffin cups, filling 3/4 full. Top with extra cheese.
  4. Bake for 20–25 minutes until golden brown. Cool slightly before serving.

Notes

Great use for leftover mashed potatoes. Add bacon or veggies for variation.
