Peach Filling
  • 3 pounds fresh peaches, pitted and sliced (about 8 medium-large)
  • 1/4 cup brown sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp cornstarch
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
Biscuit Topping
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1/3 cup granulated sugar plus 1 tablespoon for sprinkling
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 6 tbsp unsalted butter, cold and cubed
  • 1/4 cup milk plus more as needed
  • 1/8 tsp ground cinnamon for topping
  • Vanilla ice cream for serving

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.
  2. In a large bowl, toss peaches with brown sugar, lemon juice, cornstarch, cinnamon, and nutmeg until well coated. Spread evenly into the prepared baking dish.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold cubed butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Stir in milk until just combined. Drop spoonfuls of biscuit topping over the peach mixture. Sprinkle with remaining sugar and cinnamon.
  5. Bake for 40–45 minutes, until the topping is golden brown and peaches are bubbling. Cool slightly before serving.
  6. Serve warm with vanilla ice cream 🍨.
