Ingredients
  

Stew Base
  • 2 lb beef chuck cubed
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 medium carrots sliced
  • 3 cups potatoes cubed
  • 3 cups beef broth
  • 1.5 cups dry red wine

Equipment

  • Large pot or Dutch oven

Method
 

  1. Season and flour beef, then brown in batches.
  2. Cook onions and carrots until softened.
  3. Add tomato paste, garlic, wine, and broth.
  4. Simmer with herbs until beef is tender.
  5. Add potatoes and cook until soft.
