Ingredients
  

Sweet Potato Filling
  • 3 lbs sweet potatoes peeled and cubed
  • 0.5 cup unsalted butter melted
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
Topping
  • 2.5 cups mini marshmallows

Equipment

  • Large pot
  • Mixing bowl
  • 9x13 inch baking dish

Method
 

  1. Boil sweet potatoes until fork-tender and drain.
  2. Mash sweet potatoes and mix with remaining filling ingredients.
  3. Spread mixture into baking dish and bake for 25 minutes.
  4. Top with marshmallows and bake until golden.

Notes

Add marshmallows just before finishing to prevent over-browning.
