Ingredients
  

  • 6 large hard-boiled eggs, peeled and chopped
  • 3 tablespoons mayonnaise or light mayo
  • 2 tablespoons Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 stalk celery, finely diced
  • 2 green onions, chopped
  • 1 teaspoon lemon juice
  • 1/4 teaspoon paprika
  • to taste salt and black pepper
  • 8 leaves lettuce butter, romaine, or iceberg

Method
 

  1. Peel and chop hard-boiled eggs.
  2. Mix mayonnaise, Greek yogurt, Dijon mustard, and lemon juice in a bowl.
  3. Stir in celery, green onions, and paprika.
  4. Fold in chopped eggs and season with salt and pepper.
  5. Wash and dry lettuce leaves.
  6. Spoon egg salad into lettuce leaves and garnish with onions and paprika.

Notes

Keep lettuce leaves separate from egg salad until ready to serve.
