Ingredients
  

Main Ingredients
  • 6 large eggs hard-boiled
  • 1/4 cup roasted corn
  • 3 tbsp mayonnaise
  • 1 tbsp chipotle mayo
  • 1 tsp lime juice
  • 1 clove garlic finely grated
  • 1 tbsp cotija cheese crumbled
  • 1 tsp chili powder or Tajín
  • salt and pepper to taste
  • fresh cilantro for garnish
  • extra cotija, corn, lime zest for topping

Method
 

  1. Boil eggs, cool, peel, and slice in half.
  2. Remove yolks and mash with mayo, chipotle mayo, lime, garlic, salt, and pepper.
  3. Fold in roasted corn and cotija cheese.
  4. Pipe or spoon filling into egg whites.
  5. Top with chili powder or Tajín, cilantro, cotija, corn, and lime zest.
  6. Chill until serving.

Notes

Char your corn for authentic elote flavor; add extra chipotle for more heat.
