- Trim, clean, and slice leeks thinly.
- Heat olive oil and butter in skillet over medium heat. Add leeks and salt, cook until soft and golden.
- Stir in garlic, thyme, and paprika. Cook 1–2 minutes until fragrant.
- Add butter beans and stir gently to coat in leek mixture.
- Pour in vegetable broth and simmer for 8–10 minutes until slightly reduced.
- Add lemon zest and juice, season to taste, and garnish with parsley before serving.
Notes
Serve warm with crusty bread or as a side to grilled meats. Add chili flakes for a spicy kick.
