Ingredients
  

Base
  • 2 tablespoons olive oil
  • 1 tablespoon butter optional
  • 2 large leeks trimmed, cleaned, and sliced
  • 3 cups cooked butter beans or canned, drained and rinsed
  • 3 cloves garlic minced
  • 1 teaspoon thyme leaves fresh or dried
  • 1/2 teaspoon smoked paprika optional
  • 1/2 cup vegetable broth
  • 1/2 lemon zest and juice
  • to taste salt and black pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Trim, clean, and slice leeks thinly.
  2. Heat olive oil and butter in skillet over medium heat. Add leeks and salt, cook until soft and golden.
  3. Stir in garlic, thyme, and paprika. Cook 1–2 minutes until fragrant.
  4. Add butter beans and stir gently to coat in leek mixture.
  5. Pour in vegetable broth and simmer for 8–10 minutes until slightly reduced.
  6. Add lemon zest and juice, season to taste, and garnish with parsley before serving.

Notes

Serve warm with crusty bread or as a side to grilled meats. Add chili flakes for a spicy kick.
