Ingredients
  

Chicken
  • 2 lbs chicken thighs cut bite-size
  • 2 tablespoons cornstarch
  • 1 tablespoon oil
Sauce
  • 0.5 cup soy sauce
  • 0.5 cup brown sugar
  • 0.25 cup bourbon or apple juice
  • 0.25 cup apple cider vinegar
  • 0.25 cup water
  • 2 tablespoons ketchup
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 0.25 teaspoon red pepper flakes
Thickener
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Equipment

  • Large skillet
  • Mixing bowls
  • Whisk

Method
 

  1. Coat chicken with cornstarch and brown in skillet.
  2. Whisk sauce ingredients in skillet and bring to simmer.
  3. Add chicken back and simmer 10–15 minutes.
  4. Thicken with cornstarch slurry.

Notes

For sweeter sauce, add extra brown sugar.
