- Heat olive oil in a skillet over medium heat.
- Add diced onion and bell pepper; sauté until softened.
- Add breakfast sausage and cook until browned. Remove and set aside.
- In the same skillet, cook hash browns until crispy and golden. Remove and set aside.
- Whisk eggs with salt and pepper. Scramble in skillet until fluffy.
- Warm tortillas to make pliable.
- Assemble burritos with eggs, sausage mixture, hash browns, and cheese.
- Fold sides in, then roll tightly into burritos.
- Wrap burritos in foil and freeze in freezer-safe bags or containers.
- Reheat by microwaving unwrapped burrito for 2–3 minutes or baking at 350°F for 20 minutes.
Notes
Add salsa or avocado after reheating for extra freshness. Keeps up to 3 months in the freezer.
