Ingredients
  

Main Ingredients
  • 10 flour tortillas large
  • 10 eggs large
  • 1 lb breakfast sausage or bacon/ham
  • 1 cup cheddar cheese shredded
  • 1 bell pepper diced
  • 1 onion small, diced
  • 1 cup hash browns frozen or fresh
  • 2 tbsp olive oil
  • salt and pepper to taste

  • Mixing bowls
  • Foil or freezer bags

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and bell pepper; sauté until softened.
  3. Add breakfast sausage and cook until browned. Remove and set aside.
  4. In the same skillet, cook hash browns until crispy and golden. Remove and set aside.
  5. Whisk eggs with salt and pepper. Scramble in skillet until fluffy.
  6. Warm tortillas to make pliable.
  7. Assemble burritos with eggs, sausage mixture, hash browns, and cheese.
  8. Fold sides in, then roll tightly into burritos.
  9. Wrap burritos in foil and freeze in freezer-safe bags or containers.
  10. Reheat by microwaving unwrapped burrito for 2–3 minutes or baking at 350°F for 20 minutes.

Notes

Add salsa or avocado after reheating for extra freshness. Keeps up to 3 months in the freezer.
