Freezer Breakfast Sandwiches

Make-ahead breakfast sandwiches with eggs, cheese, and sausage on toasted English muffins. Perfect for freezing and quick morning meals.

Ingredients
  

  • 6 large eggs
  • 2 tbsp milk
  • salt and pepper to taste
  • 6 English muffins split and toasted
  • 6 slices cheddar cheese or preferred cheese
  • 6 breakfast sausage patties cooked
  • butter or oil for greasing pan

  • 9x13 inch baking dish
  • Mixing bowl
  • Whisk
  • Foil or parchment paper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch dish.
  2. Whisk eggs, milk, salt, and pepper. Pour into dish and bake 20–25 minutes.
  3. Let cool and cut into 6 equal portions.
  4. Toast English muffins lightly.
  5. Assemble sandwiches with egg, sausage, and cheese.
  6. Cool completely, wrap individually in parchment and foil, and freeze.
  7. Reheat in microwave 1½–2 minutes or in oven 20–25 minutes.

Notes

Cool sandwiches completely before freezing to avoid sogginess. Mix and match fillings to suit your taste!
