French Onion Orzo Bake

Main Ingredients
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 cup orzo pasta
  • 2 1/2 cups beef broth
  • 1/2 cup heavy cream
Cheese Topping
  • 1 cup Gruyère cheese, shredded
  • 1/2 cup mozzarella cheese, shredded

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Caramelize onions in butter and olive oil for 25–30 minutes.
  3. Add garlic and thyme; cook 1–2 minutes.
  4. Stir in orzo and coat with onion mixture.
  5. Add broth and simmer 3–4 minutes.
  6. Stir in heavy cream.
  7. Top with Gruyère and mozzarella.
  8. Bake 15–20 minutes until golden and bubbly.

Notes

For extra flavor, deglaze onions with white wine before adding orzo.
