- Preheat oven to 375°F (190°C).
- Caramelize onions in butter and olive oil for 25–30 minutes.
- Add garlic and thyme; cook 1–2 minutes.
- Stir in orzo and coat with onion mixture.
- Add broth and simmer 3–4 minutes.
- Stir in heavy cream.
- Top with Gruyère and mozzarella.
- Bake 15–20 minutes until golden and bubbly.
Notes
For extra flavor, deglaze onions with white wine before adding orzo.
