Ingredients
  

Apple Coleslaw
  • 4 cups green cabbage, shredded
  • 2 cups red cabbage, shredded
  • 2 apples, julienned
  • 1 cup shredded carrots
  • 2 green onions, sliced
Dressing
  • 1/3 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice to prevent apple browning

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Shred cabbage and place in a large bowl.
  2. Add shredded carrots and sliced green onions.
  3. Julienne apples, toss with lemon juice, and add to bowl.
  4. Whisk together mayo, vinegar, honey, mustard, salt, and pepper.
  5. Pour dressing over slaw and toss to coat.
  6. Rest 10–15 minutes before serving.
