Ingredients
  

Salad
  • 5 cups shredded cabbage
  • 1 cup black beans, rinsed
  • 1 cup corn fresh, frozen, or canned
  • 1 cup cherry tomatoes, halved
  • 0.5 cup shredded cheddar cheese
  • 3 green onions, sliced
  • 0.25 cup cilantro, chopped
  • 1 cup Fritos plus more for topping
Dressing
  • 0.5 cup ranch dressing
  • 1 tbsp lime juice
  • 1 tsp taco seasoning
  • 0.5 tsp chili powder
  • 0.5 tsp garlic powder
  • salt and pepper to taste

Equipment

Method
 

  1. Combine cabbage, beans, corn, tomatoes, cheese, green onions, and cilantro in a large bowl.
  2. Whisk ranch, lime juice, taco seasoning, chili powder, garlic powder, salt, and pepper.
  3. Pour dressing over salad and toss to combine.
  4. Add Fritos just before serving and toss lightly.
  5. Top with extra Fritos and cilantro.

Notes

Add Fritos right before serving for maximum crunch.
