Ingredients
  

  • 1 cup plain Greek yogurt full-fat or 2%
  • 0.5 cup creamy peanut butter natural
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 0.33 cup mini chocolate chips optional
  • 1 pinch sea salt optional

  • Mixing bowl
  • Spoon or spatula
  • Baking sheet or silicone mold
  • Parchment paper

Method
 

  1. Combine Greek yogurt, peanut butter, honey, and vanilla in a bowl. Mix until smooth.
  2. Fold in mini chocolate chips, reserving some for garnish.
  3. Line a baking sheet or use a silicone mini muffin mold. Scoop mixture into portions.
  4. Top with remaining chips or crushed peanuts and sprinkle sea salt if desired.
  5. Freeze for 2-3 hours or until firm.
  6. Transfer bites to an airtight container and store in the freezer.

Notes

To make chocolate-dipped bites, freeze first, then dip in melted chocolate and refreeze.
