Method
- Combine Greek yogurt, peanut butter, honey, and vanilla in a bowl. Mix until smooth.
- Fold in mini chocolate chips, reserving some for garnish.
- Line a baking sheet or use a silicone mini muffin mold. Scoop mixture into portions.
- Top with remaining chips or crushed peanuts and sprinkle sea salt if desired.
- Freeze for 2-3 hours or until firm.
- Transfer bites to an airtight container and store in the freezer.
Notes
To make chocolate-dipped bites, freeze first, then dip in melted chocolate and refreeze.
