Ingredients
  

Shortbread Cookies
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup rainbow sprinkles (jimmies)
Frosting Filling
  • 1/2 cup unsalted butter, softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream or milk
  • pinch of salt

Method
 

  1. Cream butter, powdered sugar, and sugar until fluffy.
  2. Mix in vanilla, then flour and salt.
  3. Fold in sprinkles and chill dough.
  4. Roll dough, cut into rounds, and bake at 325°F for 10–12 minutes.
  5. Beat frosting ingredients until fluffy.
  6. Assemble cookies with frosting filling.
