Method
- Wash and chop all vegetables evenly.
- Heat olive oil in a large skillet over medium-high heat.
- Add firm vegetables like carrots and broccoli and stir-fry for 3–4 minutes.
- Add bell peppers and snap peas and continue cooking for 2–3 minutes.
- Push vegetables to the sides and add butter and garlic to the center.
- Cook garlic for 20–30 seconds until fragrant.
- Stir vegetables to coat in garlic butter.
- Season with salt, pepper, and soy sauce if using.
- Turn off heat, add lemon zest or juice, and toss.
- Garnish with parsley and serve warm.
Notes
Use any combination of vegetables you have available. Adjust butter and garlic amounts to taste.
