Roasted Sweet Potato Ingredients
  • 3 large sweet potatoes, diced 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped for garnish

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 425°F and line a baking sheet.
  2. Toss diced sweet potatoes with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.
  3. Spread in a single layer on the baking sheet.
  4. Roast 25 minutes, stir, then roast another 10–15 minutes.
  5. Remove from oven and sprinkle with Parmesan.
  6. Garnish with parsley and serve warm.

Notes

For extra crispiness, toss potatoes with 1 teaspoon cornstarch before baking.
