Method
- Preheat oven to 425°F and line a baking sheet.
- Toss diced sweet potatoes with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.
- Spread in a single layer on the baking sheet.
- Roast 25 minutes, stir, then roast another 10–15 minutes.
- Remove from oven and sprinkle with Parmesan.
- Garnish with parsley and serve warm.
Notes
For extra crispiness, toss potatoes with 1 teaspoon cornstarch before baking.
