Method
- Melt butter and olive oil in a large pot and sauté diced onion until soft.
- Add garlic and cook for one minute until fragrant.
- Add cubed potatoes and broth. Bring to a boil.
- Reduce heat and simmer 15–20 minutes until potatoes are tender.
- Blend soup until smooth using an immersion blender.
- Stir in cream, salt, pepper, and thyme.
- Simmer another 3–5 minutes and serve warm.
Notes
For deeper flavor, try roasting the garlic before adding it to the soup.
