Ingredients
  

Soup
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion diced
  • 6 cloves garlic minced
  • 4 potatoes peeled and cubed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme

  • Mixing bowls
  • Immersion blender

Method
 

  1. Melt butter and olive oil in a large pot and sauté diced onion until soft.
  2. Add garlic and cook for one minute until fragrant.
  3. Add cubed potatoes and broth. Bring to a boil.
  4. Reduce heat and simmer 15–20 minutes until potatoes are tender.
  5. Blend soup until smooth using an immersion blender.
  6. Stir in cream, salt, pepper, and thyme.
  7. Simmer another 3–5 minutes and serve warm.

Notes

For deeper flavor, try roasting the garlic before adding it to the soup.
