Method
- Cook pasta in salted water until al dente. Reserve 1 cup pasta water, drain.
- Heat olive oil in skillet over medium heat. Sauté shallot and garlic.
- Add tomato paste, cook 2–3 min until darker. Pour vodka, cook until reduced.
- Lower heat, stir in cream and red pepper flakes until smooth.
- Add pasta and butter, toss with sauce. Stir in Parmesan, add pasta water as needed.
- Season with salt and pepper. Serve garnished with basil and Parmesan.
Notes
Vodka adds depth but can be omitted. Adjust chili flakes for heat preference.
