Ingredients
  

Sauce
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/4 cup tomato paste
  • 1/4-1/3 cup vodka
  • 1 cup heavy cream
  • 1 tsp red pepper flakes adjust to taste
  • 2 tbsp butter
  • 1/2 cup grated Parmesan cheese plus more for garnish
  • salt and pepper to taste
Pasta
  • 12 oz pasta (penne or rigatoni)
  • fresh basil for garnish

Equipment

  • Large skillet
  • Pot for boiling pasta
  • Wooden spoon
  • Measuring cups

Method
 

  1. Cook pasta in salted water until al dente. Reserve 1 cup pasta water, drain.
  2. Heat olive oil in skillet over medium heat. Sauté shallot and garlic.
  3. Add tomato paste, cook 2–3 min until darker. Pour vodka, cook until reduced.
  4. Lower heat, stir in cream and red pepper flakes until smooth.
  5. Add pasta and butter, toss with sauce. Stir in Parmesan, add pasta water as needed.
  6. Season with salt and pepper. Serve garnished with basil and Parmesan.

Notes

Vodka adds depth but can be omitted. Adjust chili flakes for heat preference.
