- Cook pasta in salted boiling water until al dente. Reserve pasta water.
- Sauté shallot and garlic in olive oil.
- Cook tomato paste and chili flakes until darkened.
- Add vodka and simmer briefly.
- Stir in cream and butter until smooth.
- Add pasta and pasta water, then stir in Parmesan and season.
Notes
Reserve pasta water to adjust sauce consistency.
