Ginger Garlic Chicken Noodle Soup
  • 2 tbsp olive oil or sesame oil
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 2 tbsp fresh ginger, minced or sliced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 6 oz egg noodles
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar optional
  • 1 tsp sesame oil
  • salt and pepper to taste
  • 0.5 tsp turmeric optional
  • green onions for garnish
  • fresh cilantro for garnish

Equipment

Method
 

  1. Sauté onion in oil; add garlic and ginger.
  2. Add carrots and celery; cook 3–4 minutes.
  3. Pour in broth, soy sauce, and turmeric; simmer 10 minutes.
  4. Add noodles and cook until tender.
  5. Stir in shredded chicken and sesame oil; adjust seasoning.
  6. Serve with green onions and cilantro.

Notes

For best flavor, simmer longer to deepen the ginger-garlic broth.
