Ingredients
  

  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 6 cups chicken broth
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
  • 1 tbsp soy sauce optional

Method
 

  1. Sauté onion in olive oil until softened.
  2. Add garlic and ginger; cook until fragrant.
  3. Add carrots and celery and cook briefly.
  4. Pour in broth and bring to boil.
  5. Add chicken and noodles; simmer until noodles are tender.
  6. Season and serve warm.

Notes

For best texture when storing, cook noodles separately and add before serving.
