Ingredients
  

  • 2 lb carrots peeled and sliced diagonally
  • 3 tbsp unsalted butter
  • 3 tbsp honey or maple syrup
  • 2 tbsp brown sugar
  • 0.5 tsp cinnamon optional
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Boil carrots in salted water for 5–6 minutes until tender-crisp. Drain and set aside.
  2. Melt butter in a skillet over medium heat.
  3. Stir in honey, brown sugar, cinnamon, salt, and pepper. Cook 1–2 minutes until glaze thickens slightly.
  4. Add carrots to skillet and toss to coat in glaze.
  5. Simmer 3–4 minutes until glossy and tender.
  6. Garnish with parsley and serve warm.

Notes

Add a pinch of nutmeg for extra holiday warmth. For savory variation, replace honey with maple syrup and add thyme.
