Ingredients
  

Chicken Marinade
  • 1 lb chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Bowls
  • 2 cups cooked rice
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/3 cup kalamata olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup tzatziki sauce

Equipment

  • Mixing bowl
  • Skillet or grill pan

Method
 

  1. Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Cook rice according to package instructions.
  3. Grill or pan-sear chicken until cooked through, then slice.
  4. Assemble bowls with rice, chicken, vegetables, olives, feta, and tzatziki.

Notes

Serve with warm pita or extra tzatziki for added flavor.
