Ingredients
  

Salad
  • 3 ripe peaches halved and pitted
  • 4 cups arugula or mixed greens
  • 0.5 cup feta cheese crumbled
  • 0.5 cup walnuts toasted
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 2 tbsp balsamic glaze store-bought or homemade
  • 1 pinch salt and pepper to taste

Equipment

  • Grill pan or outdoor grill
  • Salad bowl
  • Tongs
  • Small whisk

Method
 

  1. Preheat grill or grill pan to medium-high heat and brush lightly with oil.
  2. Brush peaches with olive oil and honey, grill for 2–3 minutes until softened with grill marks.
  3. Arrange arugula in a salad bowl.
  4. Top with grilled peaches, feta, and toasted walnuts.
  5. Season lightly with salt and pepper.
  6. Drizzle balsamic glaze over the salad and serve immediately.

Notes

Best served fresh. Add grilled chicken or shrimp for a heartier meal. Substitute goat cheese for feta if preferred.
