Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 piece lime, juiced
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Equipment

  • Mixing bowls
  • Grill or grill pan
  • Tongs
  • Shallow dish or zip-top bag

Method
 

  1. Combine salsa verde, olive oil, garlic, cumin, chili powder, lime juice, salt, and pepper in a bowl.
  2. Marinate chicken in half the mixture for at least 30 minutes.
  3. Preheat grill to medium-high heat and oil grates.
  4. Grill chicken 6–7 minutes per side, until cooked through (165°F internal temperature).
  5. Top chicken with salsa verde and cheese during last 2 minutes; cover to melt.
  6. Remove from grill, sprinkle with cilantro, and serve with lime wedges.

Perfect for summer grilling; pairs well with rice or tortillas.
