  • 1 lb lean ground beef
  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder optional
  • salt and black pepper to taste
  • 0.5 cup cottage cheese
  • 2 tbsp chopped parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato cubes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Roast for 25–30 minutes, flipping halfway, until tender and golden.
  4. Meanwhile, cook ground beef in a skillet over medium heat until browned.
  5. Season with salt, pepper, and chili powder. Drain excess fat if needed.
  6. Assemble bowls with beef, sweet potatoes, and cottage cheese. Garnish with parsley and paprika.
