- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until fluffy. Beat in egg and vanilla.
- Add dry ingredients alternately with buttermilk until a smooth batter forms.
- Scoop batter onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10–12 minutes, until tops spring back when lightly touched. Cool completely on wire racks.
- For the filling: beat butter and cream cheese until smooth. Mix in powdered sugar and vanilla until creamy.
- Divide filling into two bowls, leaving one plain white and tinting the other with orange food coloring.
- Pipe or spread fillings onto half of the cooled cookies, then sandwich with the remaining cookies.
Notes
Decorate with candy eyes, sprinkles, or toy spiders for a spooky effect. Store in airtight container up to 3 days or refrigerate for longer freshness.
