Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Filling
  • 0.5 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • orange food coloring to tint half the filling

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
  3. Cream butter, granulated sugar, and brown sugar until fluffy. Beat in egg and vanilla.
  4. Add dry ingredients alternately with buttermilk until a smooth batter forms.
  5. Scoop batter onto prepared baking sheets, spacing 2 inches apart.
  6. Bake for 10–12 minutes, until tops spring back when lightly touched. Cool completely on wire racks.
  7. For the filling: beat butter and cream cheese until smooth. Mix in powdered sugar and vanilla until creamy.
  8. Divide filling into two bowls, leaving one plain white and tinting the other with orange food coloring.
  9. Pipe or spread fillings onto half of the cooled cookies, then sandwich with the remaining cookies.

Notes

Decorate with candy eyes, sprinkles, or toy spiders for a spooky effect. Store in airtight container up to 3 days or refrigerate for longer freshness.
