Ingredients
  

Cupcakes
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cream soda
  • 1/4 cup buttermilk
Butterscotch Buttercream
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/3 cup butterscotch sauce
  • 1 teaspoon vanilla extract

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Muffin tin

Method
 

  1. Preheat oven to 350°F and line a muffin tin with liners.
  2. Whisk dry ingredients together in a bowl.
  3. Cream butter and sugars, then add eggs and vanilla.
  4. Alternate adding dry ingredients with cream soda and buttermilk.
  5. Bake cupcakes for 18–20 minutes and cool completely.
  6. Prepare frosting and frost cooled cupcakes.

Notes

Top with extra butterscotch drizzle for a true butterbeer finish.
