- Blend oats in a blender until they resemble coarse flour.
- Add bananas, eggs, milk, baking powder, cinnamon, vanilla, and salt.
- Blend until smooth batter forms.
- Let batter rest for 2–3 minutes to thicken.
- Heat a greased skillet over medium heat.
- Pour 1/4 cup batter per pancake.
- Cook 2–3 minutes until bubbles appear.
- Flip and cook another 1–2 minutes until golden.
- Serve warm with desired toppings.
Notes
Use very ripe bananas for the sweetest pancakes without added sugar.
