  • 2 large chicken breasts, sliced into cutlets
  • 2 zucchini, sliced
  • 2 yellow squash, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 lemon, juiced
  • 1 lemon zest optional
  • 1/4 cup chicken broth optional

Equipment

  • Large skillet
  • Knife and cutting board
  • Tongs
  • Measuring spoons

Method
 

  1. Slice chicken into cutlets and season with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat oil in skillet and sear chicken until golden and cooked through. Remove.
  3. Add squash and zucchini to skillet and sauté until tender.
  4. Add minced garlic and optional broth; cook 1 minute.
  5. Return chicken to skillet, add lemon juice and zest, and combine.
  6. Garnish with fresh herbs and serve warm.

Notes

Add cherry tomatoes or mushrooms for extra flavor.
