Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Mash bananas in a bowl until smooth.
- Stir in oats, nut butter, cinnamon, vanilla, and salt.
- Fold in chocolate chips, nuts, or seeds.
- Scoop dough onto baking sheet and flatten slightly.
- Bake 10–12 minutes until lightly golden.
- Cool on baking sheet before serving.
Notes
Great as a healthy breakfast cookie or snack. Freeze well for up to 3 months.
