Ingredients
  

Healthy Cookie Base
  • 2 large ripe bananas (mashed)
  • 1 1/2 cups rolled oats
  • 1/4 cup peanut butter or almond butter
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 pinch salt
Optional Mix-ins
  • 1/4 cup sugar-free dark chocolate chips
  • 1/4 cup raisins
  • 2 tbsp chia seeds
  • 1/4 cup chopped walnuts

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mash bananas in a bowl until smooth.
  3. Stir in oats, nut butter, cinnamon, vanilla, and salt.
  4. Fold in chocolate chips, nuts, or seeds.
  5. Scoop dough onto baking sheet and flatten slightly.
  6. Bake 10–12 minutes until lightly golden.
  7. Cool on baking sheet before serving.

Notes

Great as a healthy breakfast cookie or snack. Freeze well for up to 3 months.
