Ingredients
  

Batter
  • 2 cups rolled oats
  • 1 cup whole wheat flour or all-purpose flour
  • 2 apples medium, peeled and diced
  • 2 eggs large
  • 0.5 cup honey or maple syrup
  • 0.5 cup unsweetened applesauce
  • 0.33 cup coconut oil melted (or olive oil)
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 1 pinch salt
  • 0.5 cup raisins or dried cranberries optional
  • 0.5 cup pecans or walnuts chopped, optional
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan.
  2. In a large bowl, whisk eggs, honey, applesauce, oil, and vanilla until smooth.
  3. In a separate bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Fold dry mixture into wet mixture until just combined.
  5. Add diced apples, raisins, and nuts if using. Stir gently.
  6. Pour batter into pan, spreading evenly. Bake 35–40 minutes until golden and a toothpick comes out clean.
  7. Cool slightly before slicing. Serve warm or at room temperature.

Notes

This cake freezes well. Wrap individual slices and thaw before serving. Delicious with yogurt or a drizzle of maple syrup.
