- Preheat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan.
- In a large bowl, whisk eggs, honey, applesauce, oil, and vanilla until smooth.
- In a separate bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Fold dry mixture into wet mixture until just combined.
- Add diced apples, raisins, and nuts if using. Stir gently.
- Pour batter into pan, spreading evenly. Bake 35–40 minutes until golden and a toothpick comes out clean.
- Cool slightly before slicing. Serve warm or at room temperature.
Notes
This cake freezes well. Wrap individual slices and thaw before serving. Delicious with yogurt or a drizzle of maple syrup.
