Ingredients
  

  • 2 cups cottage cheese
  • 2 large apples peeled, cored, diced
  • 3 large eggs
  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 cup rolled oats optional
  • 1 tsp baking powder
  • 1 pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a baking dish.
  2. Blend cottage cheese, eggs, honey, vanilla, cinnamon, nutmeg, baking powder, and salt until smooth.
  3. Stir in diced apples and rolled oats (if using).
  4. Pour mixture into baking dish and bake for 40–45 minutes until set and golden.
  5. Cool slightly before slicing.
  6. Serve warm or chilled with honey drizzle or yogurt.

Notes

This recipe works with any apple variety. For more sweetness, use honeycrisp or gala apples.
