Ingredients
  

Peanut Butter Cookies
  • 1 cup creamy peanut butter
  • 0.5 cup butter, softened
  • 1 cup brown sugar
  • 0.5 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2.5 cups all-purpose flour
Peanut Butter Filling
  • 0.5 cup creamy peanut butter
  • 4 tablespoons butter, softened
  • 1 cup powdered sugar
  • 1-2 tablespoons milk or cream as needed for texture

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment.
  2. Cream peanut butter, butter, and sugars.
  3. Mix in eggs and vanilla.
  4. Add baking soda, salt, and flour.
  5. Shape dough into peanut shapes and press with fork.
  6. Bake 8–10 minutes and cool.
  7. Make filling by beating peanut butter, butter, powdered sugar, and milk.
  8. Sandwich cookies with filling.

Notes

For classic Nutter Butter look, pinch dough gently in the center and press with fork to create texture.
