Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 28 oz whole tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp sugar optional

Equipment

  • Large pot
  • Immersion blender or countertop blender
  • Cutting board
  • Chef’s knife

Method
 

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add chopped onion and cook until soft and translucent.
  3. Stir in garlic and cook briefly until fragrant.
  4. Add tomato paste and cook for 2 minutes.
  5. Add tomatoes and vegetable broth, then season.
  6. Simmer uncovered for 25 minutes.
  7. Blend soup until smooth.
  8. Stir in cream, adjust seasoning, and serve warm.

Notes

For best flavor, use high-quality tomatoes and fresh basil.
