  • 1 lb pizza dough
  • 0.5 cup pizza sauce plus more for dipping
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup mini pepperoni slices
  • 1 tbsp grated Parmesan cheese
  • 0.5 tsp Italian seasoning
  • 0.25 tsp garlic powder
  • 1 egg, beaten for egg wash
  • olive oil for brushing
  • flour for dusting

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll pizza dough on a floured surface to ¼-inch thickness and cut into rectangles or circles.
  3. Spread sauce, add cheese, pepperoni, and seasoning on one side of each dough piece.
  4. Fold dough over, seal edges with a fork, and brush with olive oil or egg wash.
  5. Bake 15–18 minutes until golden brown and crispy.
  6. Serve warm with extra pizza sauce for dipping.

Notes

For freezer-friendly prep, assemble and freeze unbaked pockets; bake directly from frozen.
