- Combine meat with onion, garlic, herbs, and spices. Blend in food processor until smooth.
- Shape into a loaf and bake at 325°F (163°C) for 45–55 minutes.
- Press loaf after baking, rest, slice thin, and crisp in a skillet.
- Mix tzatziki ingredients and chill.
- Assemble gyros with warm pita, meat, vegetables, and tzatziki.
